How to make deliciously tasting healthy Banana Muffins
It’s the weekend; work and school resume tomorrow, what better day to make some treats than today. This treat is a family favourite as parents, children and babies can snack on it. It is also easy to make and healthy as it has natural sweeteners.
1) 3 large ripe banana
2) 1/3 cup Coconut oil
3) ¼ cup Milk
4) 1 ½ cups All-purpose flour
5) 1/3 cup Oats (optional)
6) 1 teaspoon baking powder
7) ½ teaspoon Cinnamon
8) 1 teaspoon pure Vanilla extract
9) 2 Eggs
10) ½ cup Honey
11) ½ teaspoon Salt to taste
12) ½ teaspoon granulated Sugar for sprinkling
And other sprinklers for a beautiful finish.
Start by preheating the oven. Next, grease 12 cups of your muffin tin with butter except pan is non-stick and don’t require any grease.
Beat the coconut oil and honey together with a whisk in a large bowl, then add the eggs and beat well. Remember to mash the banana with a fork before mixing with milk, followed by salt, the baking soda, cinnamon and vanilla extract.
Once all that is ready, add the flour and oats to the mixture and mix with a large spoon: This is also the time to add any additional mix-ins you will like to include, like nuts, chocolate or dried fruit.
After mixing, divide the batter evenly between the 12 muffin cups, filling each cup about two-thirds full then sprinkle the tops with a small number of oats and sugar.
Bake muffins for about 25 minutes and confirm it ready when a toothpick inserted into the muffin comes out clean. Cool the muffins and serve.
Muffins can be stored in a freezer-safe bag and frozen for up to 3 months or 2 days at room temperature.
Remember, feeding babies or toddlers, it’s good to minimize added sugar.
